One of the most rewarding things about working with producers over several years like we have with Sandra, is to experience how they improve their craft and product with each harvest. Lot separation and cultivation of different varieties at the farm is one of the most exciting parts as it allows us to see just how unique and special each coffee is. The first lot we bought from Sandra was her Caturra. While those trees were affected by leaf rust, Sandra and her husband Hector quickly pivoted to growing Tabi, a resistant variety we bought as soon as we could. The third lot we got was Pink Bourbon. Now we’ve gotten our hands on this Papayo variety! The first and tiny harvest from her baby Papayo trees! It takes about four years for a coffee tree to be ready for its first harvest, and this year we only got 72 kilos of green coffee, but the quality is already great! Take a sip and enjoy the first literal fruits of a product many years in the making.
