Working with coffee we always try to focus on seasonality. However, sometimes we encounter a coffee that makes us question what we thought we knew. Washed Ethiopian coffees definitely has a place in that category. We wanted to explore this further. So we got our hands on two bags of greens from Israel Degfa, a coffee we featured early in the summer of 2018. Last week we roasted it again and it tasted better than ever. It's opened up beautifully, is sweeter and cleaner than ever.

The coffee comes from a cooperative, where hundreds of producers come together and mix their cherries. This should make for a more inconsistent product. But the amount of attention to detail made during the processing, and the incredible terroir that is the Ethiopian soil makes this coffee one of the better ones we've had for quite some time. Harvested one year ago but this is truly its time to shine.
