Working with coffee we always try to focus on seasonality. However, sometimes we encounter a coffee that makes us question what we thought we knew. Washed Ethiopian coffees definitely has a place in that category. We wanted to explore this further. So we got our hands on two bags of greens from Israel Degfa, a coffee we featured early in the summer of 2018. Last week we roasted it again and it tasted better than ever. It's opened up beautifully, is sweeter and cleaner than ever.
