Almost spot on the border between Tolima and Huila you’ll find La Vega. The 4 hectare farm is completely organic and run by Emilse Rubio and her family. At a stunning 1900 m.a.s.l. she grows her coffee along the endless and hypnotically green hills surrounding the small finca. During the harvest the coffee is hand-picked in 4 passes. This means that only perfectly ripe coffee cherries are picked and then they wait some days or even weeks for more cherries to ripen before picking them as well. This attention to detail continues throughout the processing and results in a clean, bright and sweet cup.
